Quinoa and Vegetable Buddha Bowl


Description: This colorful and nourishing Buddha bowl is perfect for lunch or dinner. Packed with protein-rich quinoa, a variety of fresh vegetables, and a flavorful tahini dressing, it’s a balanced meal that promotes mindful eating and healthy living.

Ingredients:

  • 1 cup cooked quinoa
  • 1 cup mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/2 cup shredded carrots
  • 1/2 avocado, sliced
  • 1/4 cup chickpeas, roasted
  • 1 tablespoon sesame seeds

Tahini Dressing:

  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 teaspoon maple syrup
  • 1 garlic clove, minced
  • Water to thin

Instructions:

  1. In a bowl, combine the tahini, lemon juice, maple syrup, and minced garlic. Add water as needed to reach the desired consistency.
